CELEBES KALOSSI Gourmet Coffee

Also known as Sulawesi, Celebes is simply splendid! More refined than the Sumatra, this full bodied coffee displays a smooth, syrupy, spicy flavor with hints of oak. A class act by any name. Indonesian Celebes Kalossi A, Toraja Located in the middle of the Malay Archipelego, the island of Celebes (now officially known as Sulawesi) produces another of the famous Indonesian coffees. Considered to be one of the more rare Indonesians, Kalossi characteristically has a taste similar to that of a Sumatran coffee, but with lesser body. Containing more acidity than the Sumatran, Kalosi also has very pleasant, earthy overtones. Celebes produces only around 70,000 bags of coffee each year at elevations of 2,500 to 3,500 feet using the dry process method with sun drying on earth patios. Graded by bean size from 1 to 4, with 1 being the best quality and usually possessing the best cup characteristics. The island is west of New Guinea, north of Timor.
